Sharing a delicious, healthy and easy gluten free banana bread recipe that you and your whole family will love!
I’ve been on a baking kick lately. I’m not really much of a baker but now that I’ve had the extra time to bake/cook, I’ve been taking full advantage.
A couple of weeks ago I baked home-made gluten free banana bread. IT WAS SO GOOD! I had to share it here on the blog. In fact, it didn’t even last 24 hours in my house. My family, who isn’t into gluten free/healthy treats, LOVED it. It truly tastes just as good as the regular version.
I had almond flour on hand and a bunch of ripe bananas so I thought this would be the perfect use for them. Naturally, I searched Google for a recipe I liked and stumbled upon this one and I made a few tweaks to it. I added pecans and used coconut sugar instead of honey. My take on the recipe and instructions are below!
Gluten Free Banana Bread

Prep Time: 15 mins | Cook Time: 50 mins | Rest Time: 2 hrs
INGREDIENTS
- Cooking spray for the pan (I used olive oil spray)
- 3 large eggs
- 3 large very ripe bananas, well mashed (1.5 cups)
- 1 tablespoon vanilla extract
- 2.5 tablespoons of sugar or sweetener of your choice (I used coconut sugar)
- 2 cups blanched finely ground almond flour
- 1/3 cup chopped pecans (optional)
- 1 tablespoon ground cinnamon
- ¼ teaspoon coarse salt (I used Himalayan pink salt)
- 1 teaspoon baking soda
INSTRUCTIONS
- Preheat oven to 350°F. Lightly spray a small loaf pan (8.5 X 4.5 in) with oil.
- In a medium bowl, whisk together the eggs, mashed bananas, vanilla, and sweetener.
- Gradually whisk in the almond flour, cinnamon, kosher salt, and finally the baking soda. Whisk until smooth.
- Using a rubber spatula, transfer the batter to the prepared pan.
- Bake the banana bread until browned and set, and a toothpick inserted in its center comes out dry, 40-50 minutes. (I recommend putting less time rather than more time)
- Once baked, cool the bread completely about 2 hours. Slice it into 12 slices, and enjoy!
